There hasn't been a clear tutorial for this, so I'm writing one:
Jailbreak your iPhone.
Install OpenSSH through Cydia.
Copy the file /System/Library/CoreServices/SpringBoard.app/N82AP.plist to your Mac.

Situation
I use Google Apps for my domain.
I own a MacBook running Leopard.
I own a jailbroken iPhone running 2.2.1.
Goal
Have Google serve as my primary information store to which all other devices sync.
Have the ability to sync between devices as well as replicate the state of all offline data.

Gmail Side
Enable Advanced IMAP Settings.
Set your IMAP settings.
Deselect All Mail and Starred as items that get synced.
